Tonight's dinner is a case of using things I had in the house while avoiding certain choices I was sick of. I'm getting really tired of the chicken in simmer sauce with veggies and pasta or rice, so I decided not to use a pre-made sauce at all. I chopped up some frozen bacon while thawing some chicken in the microwave, then chopped up three bell peppers, one yellow, one red, and one green, setting aside half the chopped peppers for a cucumber and multicolor pepper coleslaw I made for later.
I started heating the bacon and added the peppers, and was originally going to add just the chicken and cook it all in the bacon grease. I started to worry about running low on moisture, so I added a touch of hoisin and soy sauce. It turned out very tasty.
I chose a side of four-cheese mashed potatoes because I didn't want rice or pasta and I had a package I was able to prepare using plain water. It's not the ideal flavor pairing with this dish, but it's fine.
The coleslaw is in the fridge, we'll see how that turns out.
