A friend with a lot of dietary needs is coming over tonight, and she's said before that I don't need to cook anything special, but I really wanted to try because it makes me sad to picture her in pain later on. She does much better if she avoids gluten, dairy, and eggs, so I'm making taco salad tonight that has none of those. Corn tortilla bowl instead of flour, fake cheddar and fake sour cream, then my typical soyrizo/bean/onion mix, some corn salsa, lettuce shreds, lime/tomato vinaigrette, avocado, and olives. It'll end up being vegan due to the substitutions, though that wasn't one of the restrictions. Sometimes I do a rice layer, but the stuff onhand is rice-a-roni and I decided to just skip that layer entirely. No big whoop.
I hope the cheese and sour cream substitutes I got are good, Even if they aren't great, they'll probably blend pretty well with the other ingredients. The lime/tomato vinaigrette is what really makes the dish, and it's pretty strong.
