Turkey meatloaf from the store with a nice selection of roasted veggies: butternut squash, carrots, beets, parsnips, and beets. I made a nice big batch of the roasted veggies so I can make soup for lunch on Saturday.

This was the first time I've ever worked with fresh beets and I was dumb to wait so long.

EDIT: I forgot to mention the onion. There's an onion.

I decided a while back that words suffice when it's a meal I don't think will necessarily photograph very well. That's some fugly meatloaf. I'll take a pic of the extra pan of veggies later if it looks decent.

Just gonna chop up some garlic and heat it for a few minutes in olive oil, throw in some stock and then the veggies, heat through, and attack with the stick blender. Maybe throw in a little bit of curry and cayenne or whatever catches my eye in the cabinet.
