Serves 2

Heat a large, nonstick pan on medium. Lay out two flour tortillas and sprinkle cheese shreds over half. Sprinkle ingredients of your choice, and one more layer of cheese. Fold tortillas in half, spray one side lightly with cooking spray, and place those sides down in the pan. Two of them fit perfectly in a round pan. Place a heatproof plate on top and weigh it down with two heavy cans, one over each quesadilla.

Check one to see if it's lightly browned, and when it is, spray the uncooked sides with cooking spray, and flip the quesadillas. A fish turner helps. Replace the plate and cans and cook for a few more minutes.

When they're done, use a pizza cutter to cut them. I recommend cutting each one in half and then making one more cut in the same direction in each one so all pieces are folded over and will stay together. Serve with sour cream and salsa.

Who would use a pizza cutter on a plate?!??! I use a cutting board.

Is it weird that I totally prefer my plastic cutting board to my bamboo one? Cuz I do.

The boyfriend ordered one from the weird rewards program he has at work, he got a prize and asked if he could pick out something this time (since I'm the domestic one)... he uses it all the time and I'm like "rly? It can't be used for literally anything else". Except tiny omelettes.

That's why I like the Griddler. It do a lot of stuff. Including quesadillas, but I didn't feel like bringing it down off the top of the cabinet.

I got an uber fancy George Foreman Grill for Christmas that includes a griddle plate.. haven't played with it yet.

I tend to bake bacon and I got new frying pans too so I'd rather try pancakes on them, so I'm not sure what I'd use it for. The waffle plates for it work fine but the waffles they make are gigantic @_@
