Popsicle adventures

Not sure why I waited until the end of the summer to get on this adult popsicle kick. I guess it's because I didn't really have one until a couple of weeks ago at Rock Box, but still. I've had the molds for ages now, I should have tried it sooner.

I wanted to do something different last night, but also knew I'd be busy cleaning the grill, cooking dinner, and cleaning the grill again, so I just grabbed a bag of frozen bananas, peaches, and strawberries. Blended that all up with some simple syrup and rum. Kinda boring but I'm not looking to win any awards or anything.

I have an angostura bitters sorbet recipe that would make a killer Popsicle I bet. How do they freeze with all the alcohol in them though? Or do you just put a little?

Yeah, they can't be as strong as a regular drink or they'll just fall apart. I followed this recipe (http://www.52kitchenadventures.com/2011/07/08/mojito-popsicles/) for the mojito ones and it worked out fine. I even used a little more rum.

But they don't come out super duper solid. Very easy to bite chunks off.

Oooh, I have some flat diet coke and some irish cream something or other.

The first batch I did used club soda, your favorite. Imagine what you could do with your normal favorite cocktails plus a little simple syrup.
