Oooo thanks! I'll have to try the mad vortex technique. It worked fine when I didn't do it, I figured a hard rolling boil was enough to make the water swirl. I also recently read in an article by a top chef that one should not be daunted if it doesn't work the first couple times - like pancakes, usually the first one is a doozy.

I love poached eggs, but the amount of actual cooking I'm willing to do is probably not sufficient to get one poached properly. Now that I'm making breakfast again I'm using the "scramble in the microwave using a plastic dish" technique I learned by watching them make sandwiches at Noah's.

Soft boiled egg is a good poaching cheat I like to do. It's pretty much the same, but much more firm. I tend to mash the egg up anyway, so it doesn't make a difference to me.
