This is green thai curry sauce with chicken, three kinds of mini potatoes, and mixed vegetables, served over brown rice with a side of cottage cheese and fresh mint over both. It's tasty.

Just cuz there's three kinds doesn't mean there's a lot of them. Mini potatoes rock that way.

I'm often jealous of the things you think of putting together and actually eat. This looks delicious.

Some of the food combinations are things I wouldn't eat simply because of the flavor combinations and textures. I really wish I liked mint, curry, and cottage cheese. :-/
