Leftover chicken piccata with penne. I added the eight vegetable hodgepodge.
I miss my old vegetable medley, but rarely make it to QFC these days.

do you have a good recipe for leftover rotisserie chicken? i ask cus you seem to be the king of leftovers.

I'd probably make chicken salad with some mayo and sri-racha.

Or a quesadilla.

Or a soy sauce omelet with chicken filling.

Or use it in some chicken flavor ramen with mixed veggies.
