It's an acronym for twin ion engine so you can either say the letters or make a word out of it. Most people choose the latter for ease of use.

i can't remember, but i'm pretty sure they do say AT-ST at some point on endor, and they pronounce all the letters in it of course.

typically the walker models are all spelled out because of the variety, but "AT AT" is acceptable.
