Peel three not-very-huge sweet potatoes, cut them into planks, toss them with a tablespoon of olive oil and the following: 1 tsp cumin 1 tsp salt 1/2 tsp cayenne 1/2 tsp crushed red pepper pummeled in the mortar and pestle pinch of sugar
Once everything is coated evenly, transfer to a wire rack on a baking sheet and bake for about 35 minutes, checking 30 minutes in to see if they've reached the desired level of cookedness. Remove from the oven when they look good and sprinkle with a bit more salt.
If you don't have a wire rack, you can cook these directly on a baking sheet and flip them halfway through, but I find that pretty much anything like this gets destroyed when you do that. The rack is worth the investment.
