I was at the store yesterday, trying to figure out what to make for lunch as soon as I got home. I was thinking fish might be good, and was excited to find a couple of nice ahi steaks in the display case calling out to me. I quickly got on my phone to see what else I would need to prepare it, and the only thing I didn't have already was green onions and a lime, so I grabbed those. The drawback was having to wait an hour while it marinated, but it turned out pretty great. Too bad I chose a stupid rice side dish from the store to go with it. It was lame and I should have just made some rice. Anyway, all that was served with a little bit of avocado, corn, and pickled ginger, along with some soy sauce and wasabi for dipping.

I wish I had some pickled ginger to much on now.

Speaking of pickled, I saved the pickle juice from my last jar of pickles and a bunch of boneless and skinless breasts are in the fridge at home marinating in it right now. Dinner tonight is going to be very pickly chicken sandwiches. I'm way too excited to get home and make it.

Oh yes indeed. I usually have some thinly-sliced cucumbers or purple cabbage in there.

Chick-fil-a marinates their chicken in pickle juice. That's why it still tastes like pickles if you order it without them. They also pressure cook the chicken before frying it. AMAZING.

Why does every dish on top chef come with a side of pickled vegetables? Why is that? Seriously. Someone tell me.

I'd actually heard about either Chick Fil-a or In-n-Out doing it and decided to try it.

I think the Top Chef people like doing sides of pickled stuff because it seems like it should take a long time so if they get it done quickly it's impressive. Or something.

This sounds delicious, all of it. I tried to make my own pickles once, by saving the juice from a jar, and then adding those super tender bb cucs? They were bland. I needed to add some more salt and vinegar to the juice before I added the cucs, but it was a good learning experience. next time I make ice box pickles I'ma do that. What are you serving with your pickled chix sammies?

Waffle cut fries and curry ketchup. The sammiches were on kaiser rolls with mayo, mustard, sharp cheddar, and more pickles.
