I made tacko salad by christopher575
I made tacko salad, a photo by christopher575 on Flickr.

If you would like to as well, make a tomato dressing out of four romas, the juice of a lime, salt, pepper, and olive oil. Let it cool in the fridge while you brown up ground turkey and season it with a packet of taco seasoning, and add a can of rinsed black beans. Make a big circle of shredded lettuce, fill the center with crushed Tapatio Doritos, pile on the turkey, and surround the whole thing with the tomato dressing, avocado, corn, and shredded cheese. Top with greek yogurt, more tomato dressing, and olives.

Here is the truth:
I could probably live on tacko salads and fajitas. I make them all the time.

yummy! we eat tackos all the time and i love using the leftovers for salads, with our without chips, we always have a fuckton of iceberg lettuce that needs eating. we've given up on ground beef and switched to ground turkey, it feels so much less fatty. i'll have to try your tomato dressing sometime now that the season of produce will be upon us, usually i just have salsa instead. i always want to add beans to the meat like you do but have yet to remember to get them at the store.

that sounds really good. Perhaps I will make it sans turkey tonight.

I was thinking soyrizo would also be a good choice.

or eggs, perhaps, or maybe some ceviche...mmm that's something I've been wanting to learn how to make for some time anyway. Maybe I should use this as a reason.
