Roasted sweet potato and parsnip, balsamic roasted cauliflower and carrot, all blended up into hot chicken stock. Hints of cayenne and cinnamon. Served with a dollop of sour cream and a pressed turkey, jarlsberg, and garlic herb cheese sandwich. It turned out good, if I do say so myself.

So... You roasted the vegetables and then heated (reheated?) them in chicken stock? Seems like the vegetables would basically dissolve with that much cooking. That said, it still sounds good.

They weren't in the stock for too long before I blended with the immersion blender. Turned out fab.

Yeah, I originally had just the stock, sweet potato, and parsnip, and I blended that pretty smooth. The plan was to leave the cauliflower and carrots in large chunks, but I decided to blend those most of the way down.

I have been experimenting with soups a lot lately. It is amazing how many vegetables combinations taste really good together, and how many veggies you can sneak in and still have a delicious soup.

Sweet potatoes really are good in soup!
