Smear whipped chive cream cheese on a spinach tortilla, cover half with spinach leaves, roll up starting on that side, cut it up. Always a hit at parties.

Oh, it was good! But I learned a lesson. If you have beets in your roasted veggie soup, it's basically beet soup with hints of other stuff. They really take over.
