
This is two eggs mixed with one banana and cooked up like pancakes in a little vegetable oil. One of those recipes you see on Facebook a lot because people are avoiding flour or gluten or whatever. Seemed interesting so I figured I'd give it a whirl. Most comments on recipe sites for this mention you should add a little vanilla extract and/or flour, and I meant to, but I forgot. I covered them in balsamic macerated strawberries, so it's a pretty flavorful dish.
These are definitely very different from actual pancakes, and I'd never consider them a substitute if I was really into pancakes and couldn't have them any more for some reason. But waffles are better than pancakes anyway, so I don't eat them very often.

Blend together:
1 cup peanut butter (32 carbs)
25 – 30 drops of liquid Splenda (0 carbs)
1 egg (1 carb)
1 tsp vanilla (0 carbs)
4oz cream cheese (1 carb)
Form walnut-sized balls and place on cookie sheet. Dip the tines of a fork in powder Splenda and press the cookies down (gently) in a cross-hatch pattern.
Bake for 12 minutes makes 25 cookies at 1.4 net carbs each!
