Chicken with mixed veggies and mini potatoes in curry sauce over brown rice, with cottage cheese on the side and some fresh mint for both. I added a little Sri Racha while it was cooking but it could be a little spicier. Better to be safe than sorry, though.

One cup dry, that was enough for dinner and two containers of leftovers.
