I think if you waited until they got slushy, then swirled around with a chopstick or something, and then put the sticks in, that might help. But then again, the sticks might not hold on as well.

Did you use rum, or is everything else the mojito flavor? Would you mind sharing the recipe?

I tired making fennel and Pernod popsicles two summers ago, and although I followed the instructions very carefully (it was a New York Times recipe), it really just turned into a granita. Slush was as solid as they got. And believe me — I waited!

I didn't use enough hot water on two of them and the sticks came right out, leaving the popsicle behind. The other two, I was more careful with, and they came out fine. They weren't super-duper solid and had to be eaten quickly, but they weren't falling apart or anything.
