I used my citrus juicer to squeeze the excess moisture out of the potato
shreds. This is also the first time I managed to flip a whole pan of
anything. (I used a second pan.)

Flipping is easy, just use the wrist not the arm and practice with a piece of toast and you will see how easy it becomes. And your pots look yummy.

Getting the excess water and starch out of the potato is the key to good fried potatoes [hash browns, fries, chips, anything]. So I am sure these will turn out great.
